Holland is divided in 12 regions, one of which is Zeeland. These sweet rolls are Zeeland's specialty. The baker's shops sell them for over 1 euro per roll. How I love my Thermomix: the rolls I bake are just as nice and for 1 euro's worth of ingredients, I get 6!
Before I write down the recipe of the bolussen, I would first like to welcome the latest 'likers' of my Facebook page Jax Thermomix Recipes. It was such a surprise last night when so many of you liked my Facebook page. Thank you, I hope to translate many recipes of the Dutch section of my blog. Of course I won't bother you with recipes that can be found elsewhere on Australian or UK Thermomix blogs. The recipes I will translate here, originate from Dutch and German websites and I even have a few Jax originals.
But....the recipe for the bolussen.
Ingredients (for 6 bolussen. The amounts can easily be doubled if you want to make more rolls)
250 gram flour
10 gram sugar
15 gram butter
1/4 egg (sorry......)
7 gram yeast
25 gram milk
110 gram water
5 gram salt
125 gram dark brown muscavado sugar
2 tablespoons cinnamon
Put the ingredients of the dough, except for the butter, in the TM-bowl and knead 6 minutes. Add the butter through the lid when the TM is kneading the dough. When the dough is ready, tip it out of the bowl onto a lightly oiled working surface. Divide it into 6 pieces of around 80 grams. Cover the dough with a tea towel and let it rest for 20 minutes.
Preheat the oven at 225 degrees Celsius (conventional oven; 205 degrees fan-assisted oven). Mix the dark brown muscavado sugar with the cinnamon in a big bowl or plate.
Roll the pieces of dough into 30 centimeter long strings/strands? of dough. Wet the strings of dough with a little bit of water and cover them with the mix of muscavado sugar and cinnamon. Make sure that every piece of the dough is covered in sugar. Roll the string of dough into the shape that you see in the picture above. Tuck the end of the dough underneath the roll in the middle bit to prevent it from losing its shape.
Place the bolussen on a baking tray lined with either a silicon mat or baking paper. Bake the bolussen 7-8 minutes in the preheated oven. Leave to cool on the tray.
