Last weekend I had a bit of an emergency. I just spent hours baking lovely risolles for friends who wanted to come over that afternoon. And then I realized oh horror that we just used the last store-bought Thai Sweet Chilli sauce.
Luckily my Thermomix came to the rescue! At Not Quite Nigella's blog I found this recipe for Thai Sweet Chilli Sauce. Much better and cheaper than the store-bought sauce. One more thing that I will never again buy at the supermarket!
250 gram sugar
250 gram water
125 gram rice wine vinegar
3 cloves garlic
3 red chilli peppers (leave the seeds in for extra 'zing')
1,5 tablespoon corn flour
Put the garlic and chilli pepers in the TM-bowl, 5 seconds at speed 7. Mix the cornflour with 5 tablespoons of water in a separate bowl until the lumps are gone. Add the rest of the ingredients, together with the corn flour mix to the TM-bowl. Cook the mixture 10 minutes at 100 degrees, speed 1.
