The original recipe can be found on Cooking Classy's blog. I just copied the recipe and converted it for the Thermomix.
325 gram all-purpose flour
2 teaspoon cornflour
1 teaspoon baking powder
0,5 teaspoon baking soda
0,5 teaspoon salt
120 gram butter, at room temperature
200 gram granulated sugar
zest of 1 lemon
juice of 1 lemon
0,5 teaspoon vanillapaste
1 tablespoon honey
extra granulated sugar in a small bowl, for rolling
Preheat oven to 175 degrees Celsius.
Add the above-mentioned ingredients to the TM-bowl. Mix 25 seconds on speed 4, make sure the cookie dough is well blended (25 seconds should do the trick).
Tip the cookie dough into a bowl and roll it into small balls (the size of small meatballs).
Roll each ball in the bowl with granulated sugar to evenly coat the cookies with sugar. Place each ball on a baking tray with baking paper and flatten the cookies slightly. Allow 2 centimeters between each cookie. Bake the cookies in a preheated oven in 10 to 12 minutes (the color will be golden brown). Remove the baking trays from the oven and allow the cookies to cool on the baking sheet for plm 1 minute, then transfer them to a wire rack to cool completely.
