These pepernoten are a treat that Sinterklaas and his helping hand, Zwarte Piet (Black Pete) give to the children. They are nice and chewy, result of the honey in the ingredients.
190 gram whole-wheat flour (or spelt flour)
190 gram flour
75 gram instant custard powder
3 star anise
teaspoon baking powder
250 gram honey
50 gram dark muscavado sugar
10 gram mixed spice for ontbijtkoek or speculaas (recipe here)
2x 50 gram water
25 ml sunflower oil or rapeseed oil
1 springtin form
Add staranise to TM-bowl and grind it to a fine powder, 2 minutes speed 10. Add the whole-grain flour, the flour, the custard powder, baking powder, mixed spices for 'ontbijtkoek' and mix 5 seconds, speed 4. Tip the flour mixture into a bowl and set it aside.
Add honey and muscavado sugar to the TM-bowl, 5 minutes 90 degrees, speed 2. Add the flour mixture, mix 15 seconds at speed 5. Add 50 gram water and knead the dough 1 minute. The dough will be quite sticky due to the honey. Form the dough into a ball, wrap it in clingfilm and put it in the fridge for a minimum of 12 hours.
Take the dough out of the fridge. Preheat the oven at 175 degrees.
Break the dough in small pieces in a bowl. Add 50 gram water. Knead the pieces of dough back to 1 big piece of dough again. Put a little bit of oil on your hands so the dough won't stick to your hands and divide the dough in equal pieces and roll each piece into a long string/strand (?) of dough. Don't mind my not-so-equal pieces of dough in the picture below.....
Cover the bottom of your springtin form with baking paper and add the pepernoten to the tin.
