This recipe for flammkuchen is an Elzas specialty. It's quite simple to make.
Ingredients (2 flammkuchen):
200 gram flour
125 gram tepid water
3,5 gram (dried) yeast
1 teaspoon salt
100 gram creme fraiche
125 gram bacon, cut into cubes
1 onion, cut into rings
Add all ingredients for the dough to TM-bowl. Make sure the yeast does not touch the salt. Knead the dough for 5 minutes, then tip it out into a bowl. Cover bowl with clingfilm (or shower cap, always handy) and let dough proof for an hour.
Meanwhile, preheat your oven at 250 degrees Celsius.
Divide the dough in two pieces if you want to make 2 flammkuchen or keep it whole if you want to make one big flammkuchen (same format as your baking tray). Roll the dough in two circles (or one rectangle the size of your baking tray). Cover the dough with creme fraiche, put pepper on top of the creme fraiche and cover it with bacon and onion rings.
Bake the flammkuchen until golden in 10 to 15 minutes.
